    Place chicken breast between two sheets of plastic wrap and gently pound with the flat side of a meat tenderizer until approximately 1.3 cm thick.

    Marinate in pickle juice for 30 minutes to 1 hour.

    Whisk together egg and milk in a bowl.

    In a separate bowl, combine flour, icing sugar, paprika, salt, black pepper, garlic powder, celery salt, and cayenne pepper.

    Dip each chicken piece into the egg mixture on both sides, then dredge thoroughly in the flour mixture on both sides.

    Heat olive oil to 170–175°C in a skillet to a depth of approximately 1.3 cm.
