- 1Place chicken breast between two sheets of plastic wrap and gently pound with the flat side of a meat tenderizer until approximately 1.3 cm thick.
- 2Cut into two even pieces.
- 3Marinate in pickle juice for 30 minutes to 1 hour.
- 4Whisk together egg and milk in a bowl.
- 5In a separate bowl, combine flour, icing sugar, paprika, salt, black pepper, garlic powder, celery salt, and cayenne pepper.
- 6Dip each chicken piece into the egg mixture on both sides, then dredge thoroughly in the flour mixture on both sides.
- 7Heat olive oil to 170–175°C in a skillet to a depth of approximately 1.3 cm.
- 8Fry each cutlet for 2 minutes per side until golden brown and cooked through.
- 9Drain on paper towels.
- 10Serve on toasted sesame seed buns with pickle slices.
