    Combine flour, salt, caster sugar, yeast, milk, and 1 egg in a mixer with the dough attachment. Mix for 5 minutes until smooth. Add butter and mix on medium speed for 4 minutes. Scrape the bowl and mix for 1 minute more.

    Transfer dough to a container, cover with cling film, and refrigerate for at least 6 hours.

    Wrap the Brie completely with prosciutto slices and set aside.

    Turn the dough onto a lightly floured surface and roll into a 25 cm circle.

    Place the wrapped Brie in the center and fold the brioche edges up and over it, sealing neatly into a parcel.

    Place the parcel seam-side down on a baking tray lined with baking parchment.

    Brush with beaten egg, cover, and chill for 30 minutes.

    Brush with beaten egg again and chill for a further 30 minutes.

    Allow to rise at room temperature for 1 hour.

    Preheat oven to 200°C (180°C fan/gas 6). Bake for 22 minutes until golden brown.
