- 1Wash and cut potatoes into medium dice. Place cut potatoes in a bowl of water to prevent browning.
- 2Heat 15-30 ml olive oil in a large skillet over medium-high heat, tilting to distribute evenly.
- 3Drain potatoes and add to the hot oil. Season with salt, pepper, and allspice.
- 4Cook for 10 minutes, stirring frequently, until the potatoes are golden brown. Add additional oil if needed.
- 5Chop bacon and add to the potatoes. Toss and cook for 5-6 minutes until bacon crisps, allowing the rendered fat to continue cooking the potatoes.
- 6Reduce heat to medium-low. Add minced garlic, toss, and season again with salt and pepper.
- 7Cook for about 1 minute until the garlic becomes fragrant.
- 8Drizzle maple syrup over the potatoes and toss to coat. Cook for 1 minute to caramelize.
- 9Serve immediately in a warm bowl.
