    In a stand mixer bowl, combine warm water, a pinch of sugar, and yeast. Allow to sit until frothy, about 5-10 minutes.

    Add 115g sugar, warm milk, melted butter, eggs, and salt to the same bowl. Whisk until combined.

    Attach the dough hook to the mixer. Add flour gradually with the machine running until a smooth but slightly sticky dough forms.

    Transfer dough to a bowl, cover with plastic wrap, and proof for 1½ hours until doubled.

    Divide dough into 12 equal pieces. Roll each piece into a long oval shape, about 6mm thick, resembling a beaver's tail.

    Heat oil to 175°C in a large, deep pot. Gently place each tail into the hot oil and fry for 30-45 seconds per side until golden brown.

    Drain on paper towels. Toss with cinnamon sugar, dust with icing sugar and lemon zest, or top with Nutella and toasted almonds.
